If I capture a for example a blue flurry level 80, would the attack stat be lower than if I raise a blue flurry from level 1 and add only attack every level?

Yes, probably way lower.

About 160 lower, assuming you would evolve it at level 50.

But what happens if I use the respec pill?

It will only take off the points you used, you need to use a reborn card to get the stats fully.

A blue flurry reborn and raised from level one and evolved exactly at level 50 and level 100 would be pretty strong at level 150. Good luck mate, that's a keeper.
