Gem recruits and card availability

Are there cards that I can get only with gem recruits? If yes, which ones?
I mean, I've never seen cyclops in guild shop, and I guess I can't have one by 100%ing a stage (even if I'm just at episode 23. Or blackbeard.
Also, if I can get one of them, to evolve them I'd need 2 or 4 of them, so it can happen only via gemming or are there different ways?

level 8 guild shop ... adds couple 6-star cards into the mix

The cards I've never seen or had known somebody to get from Guild Shop were the 6* cards like Archangel, Agni, Demeter, Poseidon that double hp/attack for that colour.
Not sure if any other classes of cards will never appear in the guild shop?

I've managed to get 6* High Priestess from the guild shop who has 2.5x light HP and evolves into 7* Priestess of Light who has 2x light HP and attack.

That's because the general card that you buy from shop is 2.5 hp. There are no cards that start with the 2x hp/attack in shop. We'll I dunno what lvl 8 has in store.
