I often see the defence of monsters posted for various stages. How is this determined?

By noting what your attack was vs the actual damage caused.
i.e. 4,000 attack that causes 1,000 damage = 3,000 Shield
i.e. 4,000 attack that causes 1,000 damage = 3,000 Shield
